How to make Puerto Rican Sopa de Pollo - Chicken Soup - Video

This chicken soup is really delicious and easy to make. In this video I make the soup the original way, just like my mother used to make it, with whole pieces of chicken. However, if you want to make this recipe healthier and eliminate the fat, you can use pieces of skinless chicken breast instead of the whole pieces of chicken.
INGREDIENTS
2 pkgs. chicken pieces (about 4 lbs. total) OR chicken breast, cut in pieces
1 tbsp. extra virgin olive oil
1 cup sofrito
1 small onion - diced
2 cloves garlic - crushed
1 small can tomato sauce OR 2 tbsp. tomato paste
2 or 3 bay leaves
1 - 1-1/2 tsp. oregano
1/4 tsp. black pepper
1 large potato - cut into small pieces (about 1 inch)
2 carrots - cut in 1-inch slices
2 celery stalks - cut in 1 inch slices
6 cups water *
About 1 cup of Fideos (also known as Fidelini)
1-1/2 tsp. salt
*NOTE: If you use skinless chicken breast, use chicken broth instead of water because you will need to add the flavor that you will not get from the skinless chicken breast.
Saute the onions, garlic, sofrito, bay leaves, oregano and black pepper in the extra virgin olive oil on low heat . Add in the tomato sauce or tomato paste and stir until blended well. Cover and cook on low about 10 minutes.
1. When the onion mixture is tender, add in the chicken and water or chicken broth. Bring to a boil and cook about 35-40 minutes or so.
2. Add in the potato, carrots, celery, fideos and salt. Continue about 20 minutes or until the potatoes are cooked. If it needs it a little more black pepper and salt, add it now, but don't overdo it.

It is turning fall, soup time in just 2 or 3 more weeks. Great recipe and I will try it. I don't think I have ever made soup the same way twice. What I really love is a hot loaf of home baked bread with soup,(and real butter!) but getting to the age I got to cut out all that bread, maybe once or twice this winter though when I have company and can't eat so much, lol.

soups are great, even in Ayurveda it is recommended to have soup like food(liquid food) for the whole day at least once in a week. nice recipe and I'll try it.
